Ingredients

Pie crust

  • butter, for greasing
  • ¾ cup (3 oz.) 180 ml (85 g) almond flour
  • 4 tbsp 4 tbsp sesame seeds
  • 4 tbsp 4 tbsp coconut flour
  • 1 tbsp 1 tbsp ground psyllium husk powder
  • 1 tsp 1 tsp baking powder
  • 1 pinch 1 pinch salt
  • 3 tbsp 3 tbsp olive oil or coconut oil
  • 1 1 large egglarge eggs
  • 4 tbsp 4 tbsp water

Filling

  • 11 oz. 300 g cooked chicken breast, cut into bite-sized pieces
  • 1 cup 240 ml mayonnaise
  • 3 3 large egg, beatenlarge eggs, beaten
  • ½ (2½ oz.) ½ (70 g) green bell pepper, finely choppedgreen bell peppers, finely chopped
  • 1 tbsp 1 tbsp curry powder
  • 1 tsp 1 tsp paprika powder
  • 1 tsp 1 tsp onion powder
  • ¼ tsp ¼ tsp ground black pepper
  • 4 oz. (½ cup) 110 g (110 ml) cream cheese, at room temperature
  • 1¼ cups (5 oz.) 300 ml (140 g) cheddar cheese, shredded

Making low carb simple

Instructions

Instructions are for 4 servings. Please modify as needed.

  1. Preheat oven to 350°F (175°C). Cover the bottom of a 10" (23 cm) round, springform pan with parchment paper. Grease the bottom and sides of the pan.

  2. Add the ingredients for the pie crust into a food processor bowl, and mix together for a few minutes, or until the dough thickens into a ball. Alternatively, the crust ingredients can be mixed together with a fork, or hands.

  3. Evenly press the dough onto the base, and sides of the pan (about 1" high), with lightly oiled fingers, or spatula. Pre-bake the crust, uncovered on the middle rack, for 10–15 minutes or until lightly browned.

  4. Add the filling ingredients to a large bowl, and mix together until combined. Spread the mixture into the pie crust. Bake for 35–40 minutes or until the pie becomes lightly browned. (Check the pie half-way through the bake time; if it is browning too quickly, cover with aluminum foil.)

  5. Set aside to cool before serving.

    Hi there. Why are the metric measurements in deciliters? It's very confusing. Could they be converted to grams or mL?

    It's an exercise in culinary art and maths at the same time :) Apart from unit conversion (1dl = 100ml), you can tell if you know your fractions well enough. So 2 2/5 dl = 2.40 dl = 240ml. I think!

    It's the liquid measurements being used for dry ingredients that confuses me! Here in the UK we use grams for dry and ml for liquid. Anyone have any idea how to convert dl or ml to grams please? Otherwise the recipes are fab and make low carb/high fat eating much easier.

    This one is delicious. But.. (*yes I know this is keto, we're not supposed to count) .. but one serve of this is 1200calories if I've entered the recipe in right to Calorieking.com.au!

    That was an entire day of calories in my older school of dieting! I wonder if it should be 6 or 8 serves for the above recipe to make rather than 4. WIsh I'd worked it out before I had leftovers for breakfast and had protein bar for lunch lol blew my budget way out of the water

    Why is Cream Cheese measured as a liquid.... it'd be far easier if everything was by weight then metric or standard you just put your mixing bowl on the scale and press the tare button. It'd make changing the number of servings easier too. I love the recipes once I figure out the odd measurements.

    I noticed that the same size beef pie is said to serve 6 but 8 slices works better. I'm thinking this will make 8 slices as well.

    This could also be good simply as a frittata, save the work , calories and carbs of the crust and maybe enjoy a couple of seed crackers with it or some vegetables like steamed asparagus or broccoli.

    Maybe use sesame flour or pumkin or sunflower seed flour instead of the coconut or as suggested just skip the crust and go frittata style.

    One of my go to keto recipes. I only use 1 cup of cheese instead of 1 1/4, and for cooked chicken I use thigh meat pan fried in butter.

    For those worried about calories, you really need to stop counting and go with your gut. If you are eating sufficient amounts of fat , your body will feel more full, naturally limiting you calorie intake without the need to count. I cut this into sixths, and depending on how much energy I've been burning, 2 portions maximum is usually all I would eat in a whole day.

    Yes, you can lay it inside the pan and then grease it and the sides to make for easier removal of the sides after it is baked.

    love this recipe, works well with mushrooms too either with or without chicken.
    TIP: If you are thinking of making your own mayo to use, save yourself the trouble, just use a hand blender to wizz up the eggs, cream cheese and spices then add about 200ml of oil and wizz up again makes no difference to the taste or texture and there is no need to add any extra egg.

    Maya you have to bake the crust on its own and then fill it with the ingredients for the filling and bake it again :) I hope this helps you!

    I've this pie in the oven now. I am off for a day of sailing tomorrow and thought I would bring it along for lunch - serving the men along for the ride as I suspect they are not cooks and might appreciated something home cooked -- even if it is keto and gluten free (I won't tell!). This is my first time making it and yes, I also had a few minutes to think and convert to come up with acceptable measurements. Judging by the ingredients, I suspect this pie will be a hit and served cold on a sailboat is the way to go.

    My question remains... if we make mayonnaise with avocado or light olive oil, and then cook it in the pie, are we turning it into a ‘bad’ oil? Are we better to replace the mayonnaise with cream?

    This is even more delicious the next day, just like curry! I used shredded cheddar because I already had some, and the cheddar is ok, but could you suggest a cheese that might be better in this particular recipe?

    I agree with a previous poster who said that this is enjoyable without the crust. I'm not a huge fan of any kind of pie crust, and really couldn't be bothered to go to the extra trouble, so just poured the filling into a greased pie plate and served a slice on some greens. Delicious.
