Projects & Recipes

We love us some good Hawaiian bread in this house. Macgyver could eat the company that makes Kings Hawaiian bread out of business. I figured I needed to come up with something for him, since the grocery store is out of the bread most of the time. After much digging and tweaking here is what I came up with. 100% Macgyver taste tested and approved!

What you will need:

2 (.25 ounce) envelopes active dry yeast

1/2 cup warm water (110 degrees F/45 degrees C)

3 eggs

1 cup pineapple juice

1/2 cup water

3/4 cup white sugar

1/2 teaspoon ground ginger

1 teaspoon vanilla extract

1/2 cup butter, melted

6 cups all-purpose flour

Doing the deed:

In a small bowl, dissolve yeast in 1/2 cup warm water. Let stand until creamy, about 10 minutes. Now I know this sounds very strange but you’re going to have to just trust me on this one. In a large bowl, beat together the yeast mixture, eggs, pineapple juice, 1/2 cup water, sugar, ginger, vanilla, and melted butter. Gradually stir in flour until a stiff batter is formed. Cover with a damp cloth and let rise in a warm place for 1 hour.

Deflate the dough and turn it out onto a well floured surface. Divide the dough into three equal pieces and form into round loaves. Place the loaves into three lightly greased round cake pans. Cover the loaves with a damp cloth and let rise until doubled in volume, about 40 minutes. Meanwhile, preheat oven to 350 degrees F (175 degrees C). Bake in preheated oven for 25 to 30 minutes, or until bottom of a loaf sounds hollow when tapped. Macgyver eats this bread with a spinach dip which is to die for. This recipes will make 3 large loaves and my container collection did help. I had a few saved pie tins from the store bought Kings bread. I promised to find him a bread recipe and I did. Happy Noshing!

Welcome to my home and Thanks for the mention on your site. The bread is actually very good, a little heavier than King store bought but just as tasty. I hope you enjoy and the process was easy, so well worth the reward.

Are you sure you did this step: In a large bowl, beat together the yeast mixture, eggs, pineapple juice, 1/2 cup water, sugar, ginger, vanilla, and melted butter? That will incorporate all the flavors together well. I think the first time I made it I did forget the vanilla. The bread came out bland. It wasn’t until I realize looking at my kitchen island, the vanilla wasn’t even out 🙂 No, there is no kneading the dough. It is a killer on the wrist, but you slowly stir in the flour. Other than missing one of the items or not beating them together well, I’m not sure what you did. I hope your second try works out better for you.

I’m glad you liked it. It also freezes well for about 3 months.

After you bake it, then you would freeze it. I might have to try it the other way around just to see what would happen though.

I have tried 2 different time and the yeast doesn’t become creamy with the water

Make sure you are using warm water Paige. Too cold and not much happens, too hot and it will kill the yeast. Just warm water from the tap, also when you first put the yeast in the water, give it a little stir with a fork to see if that helps get it going. I know that I have bought those 3 connected packs of yeast before and the date was no where near expired but all 3 packs were duds. The mixture wont be thick after the 10 minutes but it will look creamy with a little foam too. Hope that helps.
